Wild Thyme Tea Beverages

Our tea table at the recent Penn Cumberland Annual Herb Tea Party, "A Wild Thyme Tea"  featured a Spring Cordial.  It was very well received and is an easy and flavorful recipe:

Spring Cordial
3 vegetable bouillon cubes
3 c boiling water
46 oz can of V8 juice
1 lemon
1 c chopped chives or spring onion
2 cloves garlic
1/4 c spring greens and fresh spring herbs
Combine boiling water and bouillon, let steep and cool.
Mix remaining ingredients in order in a blender
adding herbs at the end.
Suggested spring greens: violet leaves, plantain, chives, spring onion, lambs quarter's.

This lovely herbal centerpiece graced the tea table.   Our hot tea was a Rosemary House blend,  
Very Berry Tea a combination of  Elder berries, blueberry leaves, raspberries, strawberry leaves, boysenberries, cranberries, lemon verbena leaf, juniper berry, huckleberry and  roasted chicory root.

A good way to use up some herbs! We've got thyme, cilantro, rosemary, oregano, mint all coming on strong.
