Prickly Pear Cactus
Opuntia is a cold-tolerant cactus native to the Americas. It has a variety of names including pricky pear cactus or the pads are sometimes referred to as Nopales, the fruit is sometimes called Tuna. Used often in Mexican cooking (huevos con nopales), the fruit is also used to make a delicious jelly, candy or in drinks.
When I was growing up our neighbor had huge plants of this and cooked with it all the time. As a young girl I didn't know that I should have been standing in their kitchen learning, now I wish I had. One time they took us to a stream to gather watercress and that made the biggest impression because we could taste right then.
