Pimiento Cheese Sandwich

Pimiento Cheese Sandwich

16 oz. sharp Cheddar Cheese, grated
4 oz. pimientos, with juice
1 c. mayonnaise
3/4 c. pecans, chopped
dash of salt
dash of hot sauce

Place all ingredients in a food processor and combine, being careful not to over process. Refrigerate filling to allow flavors to blend. Spread filling on Pumpernickel bread. Cut into desired shape with cookie cutter, or simply remove crusts and cut into triangles. Enjoy!

  1. Everytime I hear of pimento cheese sandwiches I want to make them, but don't. Must buy some pimentos then I can do just that. Sounds yummy!

  2. Everyone in this part of the country has a favorite pimiento cheese recipe. I don't know that I need to give your recipe a try.
