Holiday Tea Sandwich


In the mood for a holiday tea sandwich? This little treat is made by combining freshly minced parsley and finely chopped radish. Soften cream cheese with a touch of mayonnaise and mix with a herbal seasoning. I used Aunt Hildegard's Divine Dip, a zesty and flavorful Rosemary House special blend. Spread the cream cheese on a piece of bread and then cut it into smaller squares. Top with parsley and radish, perfect red and green for the holiday season. If you have a small cookie cutter, cut out festive shapes to use as the top. I recently found this cute little tree cookie cutter and have enjoyed using it this year. Serve proudly!

Your photo is lovely, but I find no instructions for actually making your sandwiches. How much cream cheese, how much bread, how many tea sandwiches does it make, etc.?

Fortunately, this type of tea sandwich is pretty adaptable to however many you are making. None of the ingredients require a specific measurement - that's the beauty of it. Are you planning on serving 8 people, use 4 oz. of cream cheese. Serving 12 people, use 8 oz. or more if you wish. Spread the cream cheese mixture on your bread. If you want large sandwiches, you will need more bread than if you are making smaller petite sandwiches. With regards to the parsley and radishes, use what you have! They add the color, so don't be skimpy. Sorry, there is nothing 'exact' to this recipe. You can make it serve 3, or make it serve 30 by using more or less of everything - cream cheese, bread, radishes, parsley and a touch of mayonnaise.

Thank you for responding to my comment. You could start with "This recipe serves 8," and then provide the amounts for 8 people. Example (for 8 people, of course): 4 pieces white bread (or however many you recommend), 4 oz. cream cheese, softened, so many teaspoons of Rosemary House Special Blend (because I did order it yesterday based on your write-up), parsley to taste, finely chopped radishes to taste, etc. I know you can do it. I believe in you.
