Lemon Caesar Salad

 
Lemon Caesar Salad - it's the dressing that makes this a hit!
1 head Romaine lettuce, cleaned and chopped
1 c. shredded Parmesan cheese
garlic croutons

Fresh Lemon Dressing
1/2 c. oil
1 Tbsp. sour cream
3 Tbsp. lemon juice (freshly squeezed)
1 tsp. freshly grated lemon zest
1 tsp. Dijon mustard
1 tsp. Worcestershire sauce
2 garlic cloves, minced
1/2 tsp. salt
1/4 tsp. pepper (or more!)

In medium bowl, combine dressing ingredients and whisk until smooth. Let dressing flavors blend and marinate overnight in fridge. Before serving, remove from fridge and allow to come to room temperature. Gently toss dressing with Romaine lettuce and Parmesan cheese. Plate salad, Add croutons and top with additional Parmesan cheese, if desired.

Oh, I am SO making this! Love Caesar Salad, and the lemon sounds like it would make it even better!
