Fascinating recipe. Last week I used my green tomatoes in a chow-chow relish with green apples, onions, and peppers. I may share it on my blog at some point.
Your Serinitea Tea looked lovely and one I would thoroughly enjoy.
One of my other favorite uses for green tomatoes is in a BLT, using an egg and some cornmeal for the coating on fried green tomato slices. (Especially good with a raw garlic, olive oil, and maple syrup spread -- but beware the garlic breath!)

That is just too cool. Sadly, all my tomatoes had blight and I got not one.
